Ingredients:

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Fresh herbs (such as parsley) for garnish

Instructions:

1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic, sauté for about 3-4 minutes.
3. Add the diced carrots, potatoes, zucchini, and bell pepper. Cook for about 5 minutes, stirring occasionally.
4. Pour the vegetable broth into the pot and add salt, black pepper, thyme, and oregano. Bring to a boil.
5. Reduce the heat and let the soup simmer for about 15-20 minutes, until the vegetables are tender.
6. Serve hot, garnished with fresh herbs.
