Serving Size: 4 servings
Ingredients:
- 1 dl quinoa
- 1 dl red lentils
- 1 cucumber
- 1 bell pepper
- 1 small red onion
- 1 dl fresh mint
- 1 dl fresh basil
- 2 tbsp olive oil
- 2 tbsp tahini
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa and lentils under cold water. Cook them separately according to package instructions until tender. Drain and let cool.
2. Peel and dice the cucumber, bell pepper, and red onion into small cubes.
3. Chop the fresh herbs finely.
4. In a bowl, combine the cooled quinoa and lentils, diced vegetables, and chopped herbs.
5. To make the tahini dressing, mix tahini, olive oil, lemon juice, salt, and pepper in a separate bowl. Add water as needed to achieve your desired consistency.
6. Pour the tahini dressing over the salad and mix well.
7. Serve immediately or let it chill in the refrigerator for a bit to enhance the flavors.
