Delicious quinoa and chickpea balls, perfect for vegetarians. They are easy to make and can be seasoned in various ways. Serve them plain or with a tasty sauce.

Ingredients:

- 1 cup quinoa
- 1 can chickpeas (about 400 g)
- 1 onion
- 2-3 cloves garlic
- 1 cup fresh herbs (e.g., parsley, cilantro)
- 2 tbsp falafel spice mix
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup all-purpose flour
- Oil for frying

Instructions:

1. Rinse the quinoa under cold water and cook according to package instructions.
2. Drain the chickpeas and lightly mash them using an immersion blender or a fork.
3. Finely chop the onion and garlic. Sauté them in oil in a pan until soft.
4. In a bowl, combine the cooked quinoa, mashed chickpeas, sautéed onion and garlic, herbs, falafel spice mix, salt, pepper, and flour. Mix until well combined.
5. Shape the mixture into small balls or patties.
6. Fry the balls in oil in a pan until golden brown, or cook them in a Philips Airfryer at 180 degrees Celsius for about 15-20 minutes until crispy.
7. Serve warm with tahini or yogurt sauce.
