This delicious tacosalad is a perfect snack combining fresh vegetables and spicy ground beef. It's easy to prepare and great for utilizing leftovers. Preparation Time: 30 minutes
Serving Size: 4
Ingredients:
- 100 g arugula
- 100 g tortilla chips
- 15 cm cucumber
- 1 box cherry tomatoes
- 100 g feta cheese
- 400 g ground beef
- 1 onion
- 2 dl spaghetti
- 1 packet taco seasoning
- 2 dl water
- 1-2 dl shredded cheese
Instructions:
1. Tear the washed arugula and place it on a serving plate.
2. Cut the cucumber and cherry tomatoes into pieces. Crumble half of the feta cheese and add it on top of the salad.
3. Arrange whole tortilla chips around the edges of the salad plate.
4. Crush the remaining tortilla chips in a bag and mix half of the crushed chips into the salad.
5. Cook the ground beef with the onion in a pan until it's fully cooked.
6. Add the taco seasoning and water to the meat mixture and let it simmer.
7. Cook the spaghetti and chop it into small pieces. Add the spaghetti and shredded cheese to the meat mixture.
8. Pour the meat mixture over the salad.
9. Sprinkle the remaining crumbled feta and crushed tortilla chips on top.
10. Serve the salad at the table and enjoy!
