Stuffed Cauliflower

A delicious and nutritious stuffed cauliflower that is easy to prepare and works well as a main dish or a side. Preparation time: 45 minutes

Ingredients:
- 1 large cauliflower - 200 g feta cheese (crumbled)
- 100 g grated cheese (e.g., Emmental or mozzarella)
- 1 dl cream
- 1 dl fresh herbs (e.g., basil and parsley, chopped)
- 1 onion (finely chopped)
- 2 cloves garlic (finely chopped)
- Salt and pepper to taste
- 2 tbsp oil
Instructions:
1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). 2. Boil the whole cauliflower in salted water for about 10-15 minutes until slightly softened but still firm. Drain and let cool.
3. Heat the oil in a pan and sauté the onion and garlic until they are soft.
4. In a bowl, mix the feta cheese, grated cheese, cream, herbs, sautéed onion, and garlic. Season with salt and pepper.
5. Trim a little off the bottom of the cauliflower so it stands upright. Carefully remove the center stem to create space for the filling.
6. Fill the center of the cauliflower with the prepared mixture.
7. Place the stuffed cauliflower in a baking dish and bake in the oven for about 25-30 minutes until the top is beautifully golden brown.
8. Let cool slightly before serving.
