This delicious and hearty dish combines ingredients you might have in your fridge, such as stuffed peppers and taco filling. It's easy to prepare and a perfect way to use up leftovers.Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 4 bell peppers (preferably different colors)- 300 g ground beef
- 1 dl taco seasoning mix
- 1 dl tomato sauce
- 1 dl corn (canned or frozen)
- 1 dl cheese (shredded)
- Salt and pepper to taste
- 1 tbsp oil for frying
Instructions:
1. Heat the oil in a frying pan over medium heat and add the ground beef. Brown the meat until fully cooked.2. Add the taco seasoning mix and tomato sauce to the beef. Stir well and let it simmer for a few minutes.
3. Rinse the bell peppers and cut off the tops. Remove the seeds and insides.
4. Add corn to the beef mixture and stir. Season with salt and pepper.
5. Stuff the bell peppers with the beef mixture and place them in a baking dish.
6. Sprinkle shredded cheese on top of the stuffed peppers.
7. Bake in a preheated oven at 180°C for about 15-20 minutes, until the cheese is melted and the peppers are soft.
8. Serve warm.
