A delicious and warming soup that brings out the flavors of autumn, perfect for enjoying on chilly evenings. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 kg potatoes - 1 large onion
- 2 garlic cloves
- 1 liter vegetable broth
- 200 ml cream
- 100 ml fresh herbs (e.g. parsley or basil)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
1. Peel and chop the potatoes, onion, and garlic. 2. Heat the olive oil in a pot and sauté the onion and garlic until softened.
3. Add the potatoes and vegetable broth to the pot. Cook for about 20 minutes until the potatoes are tender.
4. Blend the soup until smooth using an immersion blender.
5. Stir in the cream and heat the soup again, but do not boil.
6. Season with salt, pepper, and fresh herbs before serving.
