Serving Size: 4-6 servings
Ingredients:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 liter vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 200 grams frozen peas
- 100 ml cream (optional)
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and crushed garlic, sauté for about 3-4 minutes until the onion is soft.
3. Add the diced carrots and potatoes, stir well, and cook for another 5 minutes.
4. Pour the vegetable broth into the pot, add thyme, salt, and black pepper. Bring to a boil.
5. Reduce the heat and let the soup simmer for about 15-20 minutes until the vegetables are tender.
6. Add the frozen peas and cook for another 5 minutes.
7. If using cream, stir it into the soup just before serving.
8. Serve hot, garnished with fresh parsley.
