Ingredients:
- 500 g fresh mushrooms (e.g., chanterelles or porcini)- 1 large onion
- 2 garlic cloves
- 300 ml vegetable broth
- 200 ml cream
- 2 tbsp butter
- Salt and pepper to taste
- Parsley for garnish
Instructions:
1. Clean and chop the mushrooms, onion, and garlic.2. Heat the butter in a pot and add the onions. Sauté until they are soft.
3. Add the mushrooms and cook for a few minutes until they are tender.
4. Pour the vegetable broth over the mushroom mixture and let it simmer for about 10 minutes.
5. Blend the soup until smooth and stir in the cream. Heat the soup again without boiling.
6. Season with salt and pepper to taste.
7. Serve garnished with parsley.
