This delicious and easy vegan gnocchi skillet is the perfect weeknight meal that cooks up quickly and pleases the whole family.

Ingredients:
- 500 g ready-made potato gnocchi
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, sliced
- 200 g fresh spinach leaves
- 100 ml vegetable broth
- Salt and pepper to taste
- Fresh basil for garnish (optional)
- Vegan parmesan cheese (optional)
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the chopped onion and sauté until it becomes soft.
3. Add the crushed garlic and sliced bell pepper, and cook for a few minutes.
4. Add the gnocchi to the skillet and mix well.
5. Pour in the vegetable broth and stir until the gnocchi are heated through.
6. Add the fresh spinach leaves and stir until they are slightly wilted.
7. Season with salt and pepper to taste.
8. Serve warm, garnished with basil and vegan parmesan cheese if desired.
