Savory Pumpkin-Carrot Pie (Vegan)

Ingredients:
- 7 dl almond flour
- 1/2 tsp unrefined sea salt
- 1 tsp baking soda
- 1 dl organic extra virgin olive oil
- 2 tbsp water
- 2 small organic onions, finely chopped
- 2 dl grated pumpkin
- 2 dl grated carrot
- 1 dl vegetable broth
- 1/2 tsp black pepper
- 1/2 tsp paprika powder
- 1/2 tsp turmeric
Instructions:
1. Preheat the oven to 180°C (350°F).
2. In a large bowl, mix almond flour, sea salt, and baking soda.
3. Add olive oil and water to the mixture, and stir well until the dough is smooth.
4. Press the dough into the bottom and sides of a pie dish.
5. Sauté the chopped onions in a pan until they are soft.
6. Add the grated pumpkin and carrot to the onions and cook for a few minutes.
7. Stir in the vegetable broth, black pepper, paprika, and turmeric. Let it simmer for a moment.
8. Pour the filling evenly over the crust.
9. Bake in the oven for about 30-40 minutes, or until the filling is set and the top is golden brown.
10. Allow to cool slightly before serving. Enjoy!
