A delightful and refreshing salad that brings a touch of spring to your table. Perfect as a side dish for grilled meats or as a light main course. Preparation Time: 20 minutes

Ingredients:
- 200 g fresh mixed greens - 1 cucumber
- 150 g cherry tomatoes
- 1 avocado
- 100 g feta cheese
- 50 g pine nuts
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the mixed greens in cold water and drain well. 2. Slice the cucumber into half-moons and halve the cherry tomatoes.
3. Slice the avocado and crumble the feta cheese.
4. Lightly toast the pine nuts in a pan until they turn a beautiful golden brown.
5. Combine all ingredients in a large salad bowl.
6. In a small bowl, mix olive oil, balsamic vinegar, salt, and pepper, then pour over the salad.
7. Toss gently and serve immediately.
