Ingredients:
- 200 g pasta (spaghetti or penne)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve some pasta water.
2. In a pan, cook the bacon or pancetta until crispy. Add the minced garlic and sauté for a moment.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with a bit of black pepper.
4. Combine the cooked pasta with the bacon and garlic in the pan. Remove the pan from heat.
5. Quickly add the egg mixture to the pasta and mix well, ensuring the eggs don't scramble. Add reserved pasta water as needed for a creamy texture.
6. Season with salt and garnish with fresh parsley before serving. Enjoy warm!
