A delicious chocolate truffle cake infused with coffee and cognac, filled with a rich chocolate cheese mixture. Perfect dessert for celebrations or a sweet moment!
Preparation Time: 1 hour
Serving Size: 10-12 servings
Ingredients:
- 4 eggs
- 1 dl sugar
- 1 dl all-purpose flour
- ½ dl cocoa powder
- ½ tsp baking powder
- 100 g dark chocolate
- 200 g cream cheese
- 2 dl heavy cream
- 1 dl coffee
- 2 tbsp cognac
- Cocoa powder for dusting
- Powdered sugar for decoration
Instructions:
1. Whisk the eggs and sugar together until fluffy.
2. Sift the flour, cocoa powder, and baking powder together and gently fold into the egg mixture.
3. Pour the batter into a greased springform pan lined with parchment paper.
4. Bake in a preheated oven at 200°C (392°F) for 7-8 minutes. Allow the cake base to cool.
5. Mix the coffee and cognac together and soak the cooled cake base with this mixture.
6. Melt the chopped dark chocolate over low heat.
7. Combine the room temperature cream cheese with the melted chocolate.
8. Whip the heavy cream until stiff peaks form and gently fold it into the chocolate mixture.
9. Pour the filling over the cake base in the pan and refrigerate for about 2 hours to set.
10. Carefully run a sharp knife around the edge of the cake to release it from the pan.
11. Dust the top with cocoa powder.
12. Cut strips of parchment paper, place them evenly on the cake's surface.
13. Dust powdered sugar in between the strips and then remove the paper strips.
