Ingredients:
- 250 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml cream
- 1 onion
- 2 garlic cloves
- 50 g Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little cooking water.
2. Finely chop the onion and garlic. Heat olive oil in a pan and add the onion. Sauté until soft.
3. Add the fresh spinach to the pan and cook until wilted.
4. Pour the cream into the pan and stir well. Allow the sauce to simmer on low heat for a few minutes.
5. Grate the Parmesan cheese and add it to the sauce. Mix well and season with salt and pepper.
6. Combine the cooked pasta with the sauce and stir. If needed, add a little reserved pasta water for a creamier consistency.
7. Serve immediately, and sprinkle additional Parmesan cheese on top if desired.
