Ingredients:
- 300 g spaghetti
- 150 g bacon or pancetta
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (finely chopped)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions. Drain and reserve some pasta water.
2. In a pan over medium heat, cook the bacon or pancetta until crispy. Add the chopped garlic and sauté for another minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
4. Once the spaghetti is done, combine it with the bacon and garlic in the pan. Remove the pan from heat.
5. Quickly add the egg mixture to the spaghetti and stir well. If needed, add a little pasta water to achieve a creamy sauce.
6. Serve immediately and garnish with fresh parsley, if desired.
