Spinach with Mozzarella

A delightful and easy Italian spinach dish that combines fresh spinach with creamy mozzarella. Perfect as a side dish or a light main course! Preparation Time: 20 minutes
Serving Size: 2 people
Ingredients:
- 1 kg fresh spinach or about 400 g frozen spinach - Olive oil
- 1 large garlic clove
- Salt
- Black pepper
- 1 mozzarella (about 125 g)
- Parmesan cheese
Instructions:
1. If using fresh spinach, wash, clean, and blanch the spinach quickly in boiling salted water (about 2-3 minutes). Drain the spinach in a colander and squeeze out excess moisture. 2. Heat a generous amount of olive oil in a frying pan and add the minced garlic. Sauté the garlic over low heat until it turns a nice golden color, being careful not to burn it.
3. Add the spinach to the pan (frozen spinach can be added directly as ice cubes). Season with salt and pepper. Cook over low heat for about 10 minutes until the liquid has evaporated.
4. Cut the mozzarella into small cubes and stir them into the spinach. Allow the mozzarella to melt and blend for about 5 minutes. Grate Parmesan cheese on top before serving.
