Tender and flavorful flank steak cooked to perfection using the sous vide method, ideal for serving a large group. Finish it off with a beautiful sear on the grill. Preparation Time: 4-7 hours (cooking time varies based on desired doneness)
Serving Size: 4 servings
Ingredients:
- 1 flank steak (400-800 g)- 1-2 sprigs of rosemary
- 2-4 sprigs of thyme
- 2 small garlic cloves, sliced
- Salt
- Freshly ground black pepper
Instructions:
1. Take the flank steak out of the refrigerator and let it come to room temperature for about an hour before cooking.2. Preheat the sous vide circulator to your desired temperature (e.g., 55 °C for medium).
3. Pat the steak dry and season it generously with salt and freshly ground black pepper.
4. Place the steak in a vacuum-seal bag and add the sliced garlic, rosemary, and thyme on top. Seal the bag tightly.
5. Submerge the vacuum-sealed bag in the water bath and cook for your desired doneness (e.g., 3 hours at 55 °C).
6. Once the cooking time is complete, remove the steak from the bag, discard the herbs and garlic, and pat the surface dry with paper towels.
7. Grill the steak on a hot grill or cast-iron skillet until the surface is beautifully browned.
8. Sprinkle a little flaky sea salt on top and slice the steak against the grain before serving.
