A delicious and nutritious noodle soup that combines the flavors of Japanese cuisine. This quick recipe is perfect for a weeknight meal. Preparation Time: 20 minutes

Ingredients:
- 250 g fried tofu - Salt
- 2 kale leaves
- 1 spring onion
- 2.5 tbsp miso paste
- 7 dl water
- 50 g soba noodles
Instructions:
1. Cube the tofu and sprinkle with a little salt. Set aside. 2. Rinse and chop the kale and spring onion.
3. In a pot, heat the miso paste and add water. Stir until the paste dissolves.
4. Once the broth is boiling, add the kale and simmer for a few minutes.
5. Add the soba noodles and cook for another couple of minutes.
6. Stir in the tofu cubes and serve topped with spring onion.
