A delicious noodle dish perfect for kicking off the week, easy to prepare. You can add tofu or shrimp for protein and spice it up with sriracha if desired.

Ingredients:
- 200 g soba noodles
- 1 tablespoon oil (e.g., sesame oil)
- 2 garlic cloves, minced
- 1 small red chili, chopped (or to taste)
- 200 g broccoli, chopped
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- (Optional) 200 g tofu or shrimp
- (Optional) sriracha for serving
Instructions:
1. Cook the soba noodles according to package instructions, drain, and rinse under cold water.
2. Heat the oil in a large pan over medium heat. Add the garlic and chili, and sauté for about a minute.
3. Add the broccoli to the pan and stir-fry for 3-4 minutes until slightly softened.
4. Add the cooked noodles, soy sauce, and rice vinegar to the pan. Mix well.
5. If using tofu or shrimp, add them to the pan and stir until heated through.
6. Serve immediately, adding sriracha to taste if desired.
