A delicious twist on the classic Caesar salad, combining kale and smoked tofu for a perfect lunch or light dinner.

Ingredients

- 150 g kale
- 200 g smoked tofu (or regular tofu)
- 2-3 slices of bread (e.g., ciabatta or rye bread)
- 1 tbsp olive oil
- 2 tbsp smoked paprika
- 1 garlic clove
- 2 tbsp lemon juice
- 1 tbsp vegan mayonnaise
- Salt and pepper to taste
- Nutritional yeast flakes (optional, for serving)

Instructions

1. Preheat the oven to 200°C (392°F).
2. Tear the kale into bite-sized pieces and place in a bowl. Add olive oil, salt, and pepper, and massage the kale until tender.
3. Cut the bread into cubes and add to the kale. Mix well.
4. Bake the bread cubes in the oven for about 10-15 minutes, until golden brown and crispy.
5. Cut the tofu into cubes and sauté in a pan until nicely colored. Add smoked paprika and minced garlic to the pan and cook for another minute.
6. Prepare the dressing: in a bowl, mix lemon juice, vegan mayonnaise, and additional smoked paprika if desired.
7. Combine the kale, bread cubes, and smoked tofu. Pour the dressing over and mix well.
8. Serve immediately, optionally sprinkling with nutritional yeast flakes.
