A delicious and quick Caesar salad made with kale, perfect for a weekday dinner. Serves 2 as a hearty lunch or 4 as an appetizer. Preparation Time: 20 minutes

Ingredients:
- 200 g fresh kale - 2 slices of bread (e.g., ciabatta or rye)
- 2 tbsp olive oil
- 100 ml mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 garlic clove, crushed
- 2 anchovy fillets (or salt to taste)
- 50 g grated Parmesan cheese
- Black pepper to taste
Instructions:
1. Prepare the kale: Remove the tough stems and tear the kale into bite-sized pieces. Rinse and dry the kale. 2. Make the dressing: In a bowl, mix the mayonnaise, lemon juice, Dijon mustard, crushed garlic, and anchovy fillets (or salt). Blend until smooth.
3. Heat the olive oil in a pan and toast the bread slices until golden brown. Let them cool and cut into cubes.
4. In a large bowl, combine the kale and dressing. Add the bread cubes and mix gently.
5. Serve the salad on plates and sprinkle with grated Parmesan cheese and black pepper.
