A delicious blend of marinated olives, enhanced with chili, garlic, and fresh rosemary. Perfect as an appetizer or snack.
Preparation Time: 1 hour (plus marinating time)
Serving Size: 4-6
Ingredients:
- 10 cups olives, preferably mixed varieties
- 1 chili pepper
- 1 garlic clove
- 1 lemon
- Fresh rosemary sprigs
- Olive oil
Instructions:
1. Drain the olives in a colander.
2. Squeeze the juice from the lemon into a bowl.
3. Rinse and slice the chili pepper.
4. In a container, layer the chili slices and rosemary sprigs with the olives.
5. Crush the garlic clove and add it to the mixture.
6. Pour enough olive oil and lemon juice over the olives to cover them completely.
7. Allow to marinate in the refrigerator for at least one hour before serving.
