Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or pancetta
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt (to taste)
- Black pepper (to taste)
- Fresh parsley (for garnish, if desired)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. While the pasta is boiling, heat a frying pan over medium heat and add the bacon or pancetta. Cook until crispy.
3. Add the minced garlic to the pan and sauté for an additional minute. Remove the pan from heat.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper.
5. Once the pasta is ready, drain it, reserving a little pasta water. Add the pasta to the pan with the bacon and mix well.
6. Quickly pour the egg mixture over the pasta and stir to combine. Add a little reserved pasta water if needed for a creamy sauce.
7. Taste and adjust seasoning with more salt and pepper if required.
8. Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
