A delicious and satisfying Pasta Carbonara that is perfect for a weeknight dinner. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 400 g pasta (e.g., spaghetti) - 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 cloves garlic (minced)
- Salt and black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. 2. Heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy.
3. Add the minced garlic to the skillet with the bacon and sauté for an additional minute.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper.
5. Drain the pasta, reserving a little cooking water. Add the pasta to the skillet with the bacon and garlic.
6. Remove the skillet from heat and pour the egg mixture over the pasta. Quickly toss to gently cook the eggs with the heat of the pasta.
7. If the pasta seems dry, add a bit of the reserved cooking water.
8. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
