Serving Size: 10 cupcakes
Ingredients:
- 125 g butter - 150 g sugar
- 2 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- 100 ml milk
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp licorice powder
Instructions:
1. Preheat the oven to 180°C (160°C for fan oven). 2. Beat the softened butter and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, combine the flour and baking powder. Gradually add the dry mixture to the batter, alternating with the milk and lemon juice.
5. Finally, fold in the lemon zest and licorice powder.
6. Divide the batter into sturdy paper cupcake liners or muffin tins.
7. Bake in the oven for about 18-20 minutes or until the cupcakes are golden brown and fully baked.
8. Allow to cool before decorating.
