Ingredients:
- 250 g all-purpose flour
- 180 g butter, softened
- 120 g sugar
- 1.5 tsp baking powder
- 2 egg yolks
- Juice of 1/2 lemon
- 125 ml milk
Instructions:
1. Preheat the oven to 180°C (350°F).
2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
3. Add the egg yolks one at a time, mixing well after each addition.
4. Squeeze the juice of half a lemon into the mixture and stir to combine.
5. In a separate bowl, whisk together the flour and baking powder. Gradually add this dry mixture to the butter mixture, alternating with the milk, until well combined.
6. Divide the batter evenly into a muffin tray lined with muffin liners.
7. Bake in the preheated oven for about 20-25 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
8. Allow the muffins to cool in the tray for a few minutes before transferring them to a wire rack to cool completely.
