Ingredients:
- 300 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or pancetta, diced
- 2 egg whites
- 100 g Parmesan cheese, grated
- 2 garlic cloves, crushed
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain the pasta, reserving a little cooking water.
2. Heat a frying pan over medium heat and cook the bacon or pancetta until crispy. Add the crushed garlic and sauté for about one minute.
3. In a bowl, mix the egg whites and grated Parmesan cheese, adding a bit of black pepper.
4. Add the hot pasta to the pan with the bacon and garlic. Mix well.
5. Remove the pan from the heat and pour the cheese mixture over the pasta. Stir quickly to avoid scrambling the eggs. If needed, add a bit of reserved cooking water for a creamy sauce.
6. Season with salt and black pepper to taste.
7. Serve immediately, garnished with fresh parsley if desired.
