Ingredients
- 1 ½ cups all-purpose flour - ½ teaspoon salt
- ¾ cup butter (softened)
- 2 tablespoons cold water
- 4 eggs
- 2 tomatoes (sliced)
- 1 cup grated Emmental cheese
- ¾ cup cream
- A pinch of black pepper
- 1 bunch chives (chopped)
- 6 ounces blue cheese (e.g., Aura)
Instructions
1. Prepare the crust: In a bowl, mix the flour and salt. Cut in the softened butter until the mixture resembles coarse crumbs. 2. Add the cold water and mix until the dough is smooth. Press the dough into a tart pan, covering the bottom and sides.
3. Pre-bake the crust at 350°F (180°C) for about 10 minutes, until lightly golden.
4. In a bowl, whisk the eggs and add the cream, grated Emmental cheese, black pepper, and chopped chives. Mix until smooth.
5. Pour the mixture into the pre-baked crust. Top with sliced tomatoes and crumble the blue cheese over the top.
6. Bake the tart at 350°F (180°C) for about 25-30 minutes, or until the filling is set and the top is beautifully golden brown.
7. Allow to cool slightly before serving.
