Ingredients:
- 400g spaghetti
- 150g pancetta or guanciale, diced
- 2 large eggs
- 100g grated Parmesan cheese
- 2 cloves garlic, minced
- Freshly ground black pepper
- Salt, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, cook the pancetta until crispy, about 5-7 minutes. Add minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.
4. Add the hot spaghetti to the skillet with the pancetta and garlic, tossing to combine. Remove from heat.
5. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If needed, add reserved pasta water a little at a time until desired consistency is reached.
6. Season with salt and freshly ground black pepper to taste.
7. Serve immediately, garnished with chopped parsley and extra Parmesan cheese if desired.
