Tomato Lentil Rice Soup

A quick and easy tomato soup that is hearty thanks to lentils and rice. Vegan and gluten-free. Preparation Time: 30 minutes
Serving Size: 4
Ingredients:
- 1 onion- 3 garlic cloves
- 3 carrots
- 2 tablespoons oil
- 800 g crushed tomatoes
- 8 dl vegetable broth
- 1 dl red lentils
- 1 dl rice
- 1 dl oat cream
- Salt, black pepper, and chili powder to taste
- Fresh basil
Instructions:
1. Peel and finely chop the onion and garlic cloves.2. Peel and dice the carrots.
3. Heat the oil in a large pot and sauté the onion and garlic for a few minutes.
4. Add the carrots and cook for a bit longer.
5. Pour in the crushed tomatoes and vegetable broth. Mix well.
6. Add the red lentils and rice. Let it simmer on low heat for about 20 minutes, until the lentils and rice are cooked.
7. Stir in the oat cream and season with salt, black pepper, and chili powder.
8. Serve with fresh basil on top.
