Serving Size: 4-6 people
Ingredients:
- 500 g fresh herring, cleaned
- 2 dl water
- 1 dl vinegar (7%)
- 1 dl sugar
- 1 tbsp salt
- 1 bay leaf
- 5-6 black peppercorns
- 1 onion, sliced
- 1 dl fresh herbs (e.g., dill or parsley)
Instructions:
1. Rinse the herring in cold water and remove any innards. Set the herring aside.
2. Prepare the brine: In a pot, bring water, vinegar, sugar, salt, bay leaf, and black peppercorns to a boil. Stir until the sugar and salt dissolve.
3. Add the sliced onion to the brine and simmer on low heat for about 5 minutes.
4. Remove the pot from heat and let the brine cool slightly.
5. Place the herring in a deep dish and pour the cooled brine over it, ensuring they are completely submerged.
6. Cover the dish with a lid or plastic wrap and let the herring marinate in the refrigerator for at least 24 hours.
7. Serve the herring with fresh herbs and enjoy!
