Ingredients:
- 300 g pasta (such as spaghetti)
- 150 g bacon or pancetta
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Meanwhile, heat a frying pan and cook the bacon or pancetta until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and mix in the grated Parmesan cheese. Season with salt and pepper.
4. Once the pasta is cooked, drain it, reserving a little pasta water. Add the pasta to the pan with the bacon and garlic.
5. Remove the pan from heat and quickly stir in the egg mixture with the pasta. Add reserved pasta water as needed to create a creamy texture.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
