Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain the pasta, reserving a bit of the cooking water.
2. Chop the bacon or pancetta into small pieces and fry in a pan over medium heat until crispy.
3. Add the crushed garlic cloves to the bacon and cook for an additional minute.
4. In a bowl, crack the eggs and mix in the grated Parmesan cheese until well combined.
5. Add the cooked pasta to the pan with the bacon and garlic. Stir quickly to heat the pasta through.
6. Remove the pan from heat and add the egg mixture. Stir quickly to allow the eggs to cook gently from the residual heat of the pasta. Add a little reserved pasta water if needed to achieve a creamy consistency.
7. Season with salt and black pepper to taste. Serve garnished with fresh parsley if desired.
