Ingredients:
- 1 onion
- 2 garlic cloves
- 2 carrots
- 1 red bell pepper
- 1 zucchini
- 400 g canned beans (e.g., black beans or kidney beans)
- 400 g crushed tomatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika powder
- 1/2 teaspoon chili powder (optional)
- Fresh parsley or basil for garnish
Instructions:
1. Peel and dice the onion and garlic into small cubes.
2. Peel and slice the carrots, and chop the bell pepper and zucchini.
3. Heat olive oil in a large skillet over medium heat.
4. Add the onions and garlic, sautéing for about 2-3 minutes until softened.
5. Add the carrots, bell pepper, and zucchini. Cook for another 5 minutes.
6. Stir in the canned beans and crushed tomatoes. Season with salt, black pepper, paprika, and chili powder.
7. Let it simmer on low heat for about 15 minutes until the vegetables are tender.
8. Garnish with fresh herbs before serving.
