Serving Size: 4 servings
Ingredients:
- 400 g chicken fillets - 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 400 g crushed tomatoes
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 200 g rice
- 600 ml water
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a skillet over medium heat. 2. Add the chopped onion and crushed garlic, sauté for about 2 minutes.
3. Add the chicken fillets and cook until they are golden brown.
4. Add the diced bell pepper and continue cooking for a few more minutes.
5. Pour in the crushed tomatoes and add the oregano, salt, and black pepper. Stir well.
6. Rinse the rice and add it to the skillet along with the water. Stir and bring to a boil.
7. Cover with a lid and reduce the heat. Let it simmer for about 20 minutes until the rice is cooked and the liquid is absorbed.
8. Serve the portions garnished with fresh parsley.
