A delicious and simple dish that combines tomatoes, spices, and eggs. This one-pan meal is perfect for breakfast or lunch. Preparation Time: 30 minutes

Ingredients:
- 2 tablespoons olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder (or to taste)
- 1 can (400 g) crushed tomatoes
- 4 eggs
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
- (Optional: Sriracha hot sauce for added heat)
Instructions:
1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened.2. Add crushed garlic and diced bell pepper, and cook for a few more minutes until the pepper is tender.
3. Stir in cumin, smoked paprika, and chili powder. Cook for one minute, stirring well.
4. Pour crushed tomatoes into the skillet and mix. Let the mixture simmer on low heat for about 10 minutes until slightly thickened. Season with salt and pepper.
5. Make four small wells in the mixture and carefully crack an egg into each well. Cover the skillet and cook until the eggs are done to your liking (about 5-8 minutes).
6. Garnish with fresh herbs and serve warm. Drizzle with Sriracha hot sauce if you prefer a spicier flavor.
