Serving Size: 4 servings
Ingredients:
- 2 tablespoons olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon chili powder (optional)
- 1 can (400 g) crushed tomatoes
- 4 eggs
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions:
1. Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. 2. Add the crushed garlic and diced bell pepper. Cook for another 5 minutes until the pepper is tender.
3. Stir in the paprika and chili powder (if using) and mix well.
4. Pour in the crushed tomatoes and season with salt and pepper. Let the mixture simmer for about 10 minutes until slightly thickened.
5. Make four wells in the mixture and crack the eggs into the wells. Cover the skillet and cook until the eggs reach your desired doneness (about 5-8 minutes).
6. Garnish with fresh parsley or cilantro before serving.
