A delicious and hearty breakfast featuring eggs in a spiced tomato sauce, perfect for treating yourself and your loved ones on a weekend morning.

Ingredients:

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder (optional)
- 1 can (400 g) crushed tomatoes
- 4-6 eggs
- Salt and black pepper to taste
- Fresh parsley or cilantro for garnish

Instructions:

1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
2. Stir in crushed garlic and diced red bell pepper, cooking for another 5 minutes.
3. Add paprika, cumin, and chili powder, mixing well.
4. Pour in the crushed tomatoes and season with salt and pepper. Let the sauce simmer on low heat for about 10 minutes.
5. Make small wells in the sauce and crack the eggs into the wells. Cover with a lid and cook until the eggs are set, about 5-7 minutes.
6. Garnish with fresh herbs and serve with crusty bread.
