A delicious and easy dish that combines spicy tomato sauce with eggs, enhanced by the richness of siskonmakkara. Perfect for breakfast or dinner!
Preparation Time: 30 minutes
Serving Size: 3-4 servings
Ingredients:
- 300 g siskonmakkaraa
- 1 onion
- 5 garlic cloves
- 1 red bell pepper
- 1 green bell pepper
- 400 g canned crushed tomatoes
- 1 tsp sugar
- 1 tsp harissa paste
- 3 eggs
- 2 dl chopped parsley
- Salt to taste
- Black pepper to taste
- Oil for frying
Instructions:
1. Heat a skillet and add a little oil.
2. Squeeze siskonmakkara into 1-2 cm thick pieces and sauté briefly.
3. Chop the onion and garlic finely, then add them to the skillet with the siskonmakkara.
4. Chop the bell peppers and add them to the skillet.
5. Pour in the crushed tomatoes and sugar, mixing well.
6. Add salt and black pepper, stir, and let simmer for about 10 minutes.
7. Preheat the oven to 200°C (400°F).
8. Make wells in the mixture with a spoon and crack an egg into each well. Repeat this three times.
9. Bake in the oven for about 10 minutes, until the eggs are cooked to your liking.
10. Sprinkle generously with chopped parsley and enjoy. Optionally, add sliced avocado on the side.
