A refreshing combination of delicious Lemon Posset and chocolatey Rocky Road filled with salted peanuts and marshmallows. Easy to prepare and a perfect flavor pairing. Preparation Time: 2 hours

Ingredients
Rocky Road: - 200 g dark chocolate
- 200 g milk chocolate
- 1 bag of marshmallows
- 100 g salted peanuts
- About 1 tbsp butter
Lemon Posset:
- 200 ml cream
- 75 g sugar
- 50 ml lemon juice
Instructions
1. Prepare the Rocky Road: - Line a baking dish with parchment paper.
- Chop the salted peanuts into small pieces and cut the marshmallows into smaller portions.
- Melt 1 tablespoon of butter.
- Melt the dark and milk chocolates separately in the microwave or a water bath. Add half a tablespoon of butter to each chocolate and stir well.
- Pour one type of melted chocolate over the parchment paper. Sprinkle the salted peanuts and marshmallows on top.
- Pour the second type of chocolate over the toppings and decorate with more marshmallows.
- Place in the refrigerator to set for about 1 hour.
2. Prepare the Lemon Posset:
- In a saucepan, bring the cream and sugar to a boil while stirring constantly until the sugar dissolves.
- Add the lemon juice and mix well.
- Allow to cool for a moment and then transfer to the freezer. Check after about an hour and continue freezing until the posset is fully set.
3. Serve:
- Cut the Rocky Road into bite-sized pieces.
- Serve alongside the Lemon Posset and garnish if desired. Enjoy!
