Ingredients:
- 400 g spaghetti
- 150 g bacon or pancetta
- 3 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to the package instructions until al dente.
2. Meanwhile, heat a frying pan and cook the bacon or pancetta until crispy.
3. Chop the garlic cloves and add them to the pan with the bacon. Cook for another minute.
4. In a bowl, whisk together the eggs, Parmesan cheese, salt, and black pepper.
5. Once the spaghetti is ready, drain it, reserving a bit of the cooking water. Add the spaghetti to the bacon and garlic mixture.
6. Remove the pan from the heat and pour the egg mixture over the spaghetti. Stir quickly to avoid scrambling the eggs.
7. Add reserved cooking water as needed to achieve a creamy sauce.
8. Serve immediately, garnished with fresh parsley if desired.
