Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g fresh spinach
- 150 g mushrooms (e.g., button mushrooms)
- 200 ml cream
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little pasta water.
2. Chop the onion and garlic. Slice the mushrooms.
3. Heat the olive oil in a pan over medium heat. Add the onion and garlic, and sauté for about 3 minutes until softened.
4. Add the mushrooms to the pan and cook until golden brown and the liquid has evaporated.
5. Add the fresh spinach to the pan and sauté until just wilted.
6. Pour in the cream and mix well. Let the sauce simmer on low heat for a few minutes until slightly thickened. Season with salt and pepper.
7. Add the cooked pasta to the sauce and mix well. If the sauce is too thick, add a little reserved pasta water.
8. Serve the dish warm, garnished with grated Parmesan cheese if desired.
