Ingredients:

- 500 g potatoes
- 300 g carrots
- 200 g beets
- 1 onion
- 2 garlic cloves
- 3 tbsp olive oil
- 1 tbsp fresh thyme
- Salt and black pepper to taste
- 100 g feta cheese (optional)
- Fresh herbs for garnish

Instructions:

1. Peel and dice the potatoes, carrots, and beets into medium-sized cubes.
2. Finely chop the onion and garlic.
3. Heat the olive oil in a large skillet over medium heat. Add the onions and garlic, sauté until soft.
4. Add the diced vegetables to the skillet and mix well. Cook for about 10 minutes until the vegetables begin to soften.
5. Stir in the thyme, salt, and pepper. Mix well, cover, and simmer on low heat for about 20 minutes until the vegetables are fully cooked.
6. If using feta cheese, crumble it over the cooked vegetables before serving.
7. Garnish with fresh herbs and serve warm.
