Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or guanciale
- 3 large eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted boiling water according to package instructions. When al dente, reserve about 100 ml of the cooking water and drain the pasta.
2. Meanwhile, heat a frying pan and cook the bacon or guanciale until crispy. Add minced garlic and sauté for another minute.
3. In a bowl, crack the eggs and mix in the grated Parmesan cheese. Season with salt and plenty of black pepper.
4. Add the drained pasta to the frying pan with the bacon and garlic. Toss well to combine.
5. Remove the pan from the heat and quickly add the egg mixture to the pasta. Stir rapidly to ensure the eggs cook lightly and create a creamy sauce. If needed, add reserved cooking water to reach your desired sauce consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
