Ingredients:
- 300 g pasta (e.g., fusilli or spaghetti) - 200 g fresh spinach
- 200 ml heavy cream
- 100 g grated Parmesan cheese
- 2 garlic cloves (minced)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil (for garnish)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some cooking water. 2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about one minute.
3. Add fresh spinach and cook until wilted.
4. Pour in the heavy cream and mix well. Let the sauce simmer on low heat for a few minutes.
5. Stir in the grated Parmesan cheese and mix until melted. Season with salt and pepper.
6. Combine the pasta with the sauce. If the sauce is too thick, add a bit of the reserved cooking water.
7. Serve immediately, garnished with fresh basil.
