A delicious and hearty dish made with kohlrabi, carrots, and creamy goodness. Perfect as a side or vegetarian main. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g kohlrabi - 2 tbsp olive oil
- 1 onion
- 2 cloves garlic
- 3 carrots
- 1 dl vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 1/2 dl cream (optional)
Instructions:
1. Peel and chop the kohlrabi, carrots, and onion. 2. Heat the olive oil in a skillet over medium heat.
3. Add the onion and garlic to the skillet, sauté until soft.
4. Add the kohlrabi and carrots, cook for about 5 minutes.
5. Pour the vegetable broth into the skillet and season with salt, black pepper, and thyme.
6. Allow the mixture to simmer on low heat for about 15-20 minutes, until the vegetables are tender.
7. If using cream, add it at the end and mix well.
8. Serve warm.
