Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- Salt and pepper to taste
- Grated parmesan cheese for serving
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve some pasta water.2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for about 2 minutes.
3. Add bell pepper and zucchini to the skillet, cooking for a few minutes until softened.
4. Stir in cherry tomatoes and spinach. Cook until the spinach has wilted.
5. Combine the cooked pasta with the vegetables in the skillet, adding pasta water as needed, and season with salt and pepper.
6. Serve immediately with grated parmesan cheese on top.
