Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Cut the bacon or pancetta into small pieces and fry in a pan until golden brown.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese, salt, and black pepper.
4. Once the pasta is cooked, drain it while saving a little cooking water.
5. Add the hot pasta to the pan with the bacon and mix well.
6. Remove the pan from heat and quickly add the egg mixture to the pasta, stirring rapidly to cook the eggs without scrambling them.
7. If the pasta seems too dry, add a little reserved cooking water as needed.
8. Serve immediately, garnished with fresh parsley if desired.
