Ingredients:
- 300 g pasta (e.g., fusilli or penne)
- 200 g fresh spinach
- 100 ml cream
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain, reserving a bit of the cooking water.
2. Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for about one minute.
3. Add the fresh spinach to the pan and cook until wilted.
4. Pour the cream into the pan and mix well. Allow the sauce to simmer on low heat for about 2-3 minutes.
5. Add the cooked pasta to the sauce and stir until the pasta is fully coated. If the sauce is too thick, add a little reserved cooking water.
6. Season with salt and pepper. Add the grated Parmesan cheese and mix.
7. Serve immediately, garnished with extra Parmesan if desired.
